When it came time to CREATE our web site, a lot of people, including a Professor of Marketing, suggested using AI to write it. I immediately thought yeah, nah, BUGGER THAT, this has to be done hands on!
We have spent the past 25 years here on the MORNINGTON PENINSULA shaping wines to have PERSONALITY, to be reflective of TERROIR, true to STYLE and EXPRESSIVE of variety.
So when it comes to writing the website, should we shred any AUTHENTICITY we might have? Maybe forget all those years of HARD WORK? Perhaps take an easy option and turn to a machine to tell OUR STORY about OUR WINES?

Underground Winemakers was born by the coming together of Peter Stebbing Adrian Hennessy and Jonathon Stevens. Each of us had spent years being immersed in a unique atmosphere of progressive and responsive viticulture and winemaking on the Mornington Peninsula. We had seen the mistakes and the triumphs. We had spent our time in Alscace, Burgundy, and Northern Italy. Balanced with doing the hard yards along the Murray.
Our first act was to lease a small winery in MtEliza which had closed years earlier but still possessed a vineyard with some of the oldest plantings of Pinot Noir, Pinot Gris and Chardonnay on the Mornington Peninsula. We had no resources other than our experiences. We knew where we could compromise and where we couldn’t. Second hand equipment was scrounged or purchased at scrap metal prices. Repairs were made and we were ready to go. In each one of our first four vintages we processed over 100 tonnes of grapes using a one tonne press and a tiny crusher. It was hard work, but we were starting from nowhere and we had a vision.
The vision was simple; source the right grapes and make quality, approachable wines which are original, true to style and expressive of variety. Our primary focus remains with the Mornington Peninsula varieties of Pinot Noir, Gris/Grigio and Chardonnay. We also reach out beyond the Peninsula, sourcing grapes from Northern and Central Victoria to produce Durif, Moscato, Cabernet, Merlot and Shiraz. We make and bottle everything at our Mt Eliza winery. Our direct hands on approach from vineyard to bottle and beyond allows us an uncompromised control of quality while maintaining low costs. We are determined that every bottle of our wine gives quality, value and a unique (positive!) experience.
